Potato Vegetable Soup

few bacon strips, diced
2 medium potatoes, peeled and diced
medium carrot, peeled and chopped
1/2 cup (or so) water
1 stick chopped celery
half a chopped onion
salt and pepper
1-2 tblsp flour
1 cup milk
shredded cheddar cheese
2 tblsp butter

In saucepan, cook bacon until crisp. Remove and drain. Set aside. In same pan, combine potato, carrots, water, celery, onion, salt and pepper. Bring to boil. Reduce heat; cover and simmer until vegetables are tender.

In small bowl, combine flour and milk until smooth. Stir into the vegetables. Bring to a boil. Cook and stir until thickened. Reduce heat. Add cheese and butter. Stir until cheese is melted. Garnish with bacon and some shredded cheddar.
