a recipe-ish recipe

1 flank steak
bread crumbs, italian style (or i used smashed cracker crumbs with italian seasoning added to the crumbs)
grated mozzarella (or provolone)
grated pecorino romano
finely chopped flat leaf parsley
1 finely minced garlic clove
sea salt and black pepper
marinara sauce (preferably homemade)
1 cup dry white wine
olive oil
preheat oven to 375. mix the bread crumbs, the cheeses, parsley, garlic clove, 1/2 tsp salt and pepper, and a couple tablespoons of olive oil together. lay out the flank steak and season with salt and pepper; sprinkle the mixture over the steak. heat some of the olive oil in a large, oven safe pan. meanwhile, starting at the thinnest end of the steak, roll it up, jelly roll style. season the outside of the steak with salt and pepper. secure the rolled steak with kitchen twine. place the steak in the pan and sear on all sides, browning it (8 – 10 minutes). lower the heat and add cup of white wine (i used the Fish Eye brand chardonnay, any chardonnay i think will be good). let it boil. add the marinara sauce to the pan, mix together well. remove from heat and loosely cover with foil. bake for 1 1/2 hours, basting the meat every 30 minutes with the sauce. uncover and bake for 30 minutes more. let steak sit for 10 minutes after done to let the meat rest. slice into uh slices. serve with grated mozzarella on top and with plenty of sauce with it. i made a loaf of italian garlic bread to serve with this. it was delicious.
