banana streusel pie

1 pre made pie crust (they’re just easier and taste fine)
4 cups ripe sliced bananas (about 5 bananas)
1/2 cup pineapple juice (from a can of pineapple in its own juice – just save the pineapple)
1/2 cup lemon juice
1 1/2 tbls lemon zest
1/2 cup sugar
1/2 tsp cinnamon
1/2 tsp cornstarch
1/2 to 1 cup flour
1/4 cup brown sugar
1/4 cup butter (4 tablespoons)
1 tsp cinnamon

preheat your oven to 450. place the pie crust in a pie pan – cover with a double thickness of aluminum foil. bake for 8 minutes. uncover and bake 4-6 more minutes until the crust is nice and light brown. remove and let it cool. reduce the heat to 375. meanwhile, toss the sliced bananas with the pineapple and lemon juice. drain the bananas, reserving the juices. set the juices aside. gently toss the bananas with sugar and cinnamon and lemon zest. spoon into the pie shell. in a saucepan, combine the reserved juices with the cornstarch. heat until bubbling and thick. spoon this over the bananas. in another bowl, combine the flour, brown sugar, and cinnamon. cut in the butter until the mixture resembles coarse crumbs. sprinkle the streusel over the pie. cover the edges with foil, and bake until the top is nice and brown and crispy. serve pie slices with a dollop of whipped cream and a slice of banana on top, if you want to be fancy.
