Spicy Chicken and Mushrooms


i am a stir fry girl, hardcore. I think I tore this recipe out of Family Circle magazine. i will be, by the way, making far more asian food in the coming year because i got a kick ass wok set for christmas … 

Spicy Chicken and Mushrooms
1 tbls olive oil
2 cloves garlic, minced
1 tbls minced ginger
2 cups sliced mushrooms
4 scallions, sliced
1/2 tsp red pepper flakes
1/2 tsp each salt and pepper
1 lb. boneless, skinless chicken breasts, cut into 1/2 inch pieces
1 1/2 tbls soy sauce
1 tbls rice vinegar
1/2 cup chopped cilantro
cooked rice

Heat oil in pan. Add garlic and ginger. Cook it. Stir in mushrooms, scallions, red pepper flakes and 1/4 tsp each of salt and pepper; cook a few minutes, stirring often. reduce heat. add chicken to the pan and sprinkle with the rest of the salt and pepper. Cook until chicken is done. I like mine to cook up a little brown. Stir in soy sauce, vinegar, and cilantro. Cook just a couple minutes more to meld the flavors. Serve it with rice.
