Sunday Sweets

Ok, ok, so there have been far more dessert/sweet thing recipes here than actual dinners and lunches, et al. and no, contrary to what you might think we don’t just eat cookies and such all the time. I’ll get to gettin’ on the regular recipe blogging soon, but I had to post this recipe for a SUPER WICKED AWESOME white chocolate chip cookie I made today. Chocaholic requested these so i made them to pack with his lunches this week, but they’ve quickly disappeared (between him and my brother sneaking them at different intervals during the last couple of days). So i came up with a contigency plan. I yanked this recipe from and am very glad i did. try them and see if you don’t fall in love. 


White Chocolate Macadamia Nut Cookies

1/2 cup softened butter
1/2 cup shortening
3/4 cup brown sugar
1/2 cup white sugar
1 egg
1 1/2 teaspoons vanilla
2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup white chocolate chips
7 ounces chopped macadamia nuts (i’m guessing this means 3/4 cup? i actually didn’t use nuts because i didn’t have any. I threw in a whole bag of white chocolate chips instead)

heat your oven to 350. lightly grease your cookie sheets or line with parchment (if you’re feeling lazy like i often am, i just use the parchment. Love it!). cream your butter and shortening. add the sugars and mix well. add the egg and vanilla. mix ’em. in a separate bowl whisk the flour, baking soda, and salt together. add to the bowl gradually. mix it in well. stir in your chips and nuts. drop by teaspoonfuls onto the cookie sheets. i used a tablespoon and spaced ’em about 2 inches apart just to be safe. they don’t spread a whole lot, though. bake 10-12 minutes until the edges are lightly browned. these are so good …
