So i jinxed myself with the whole “yay, it’s 45 degrees, the snow is melting blah blah blah” because once again God proved how much he hates me by dumping more snow on us. it’s currently blowing hard across the yard and snowing, snowing, snowing. sigh. so more soup nights ahead, and that’s not an entirely bad thing. i picked this one up off this blog and was very pleased. on a cold, snowy Friday evening Broccoli Cheese Soup went down quite wonderfully:
Her recipe, with amounts:
1/2 cup finely chopped onion
3 tbs butter
1/4 cup flour
2 tsp chicken bouillon
3 cups milk
4 cups chicken stock
2 1/2 cups shredded cheddar cheese
4 cups broccoli florets
salt and pepper
I added: chopped carrots, celery, mushrooms.
I reduced this greatly, first of all, because Mr. Picky Pants (my brother) won’t eat anything vegetable related. So he had to make his own dinner Friday night. I also don’t use bouillon so I just used milk and stock.
Melt your butter, saute your vegetables. Sprinkle the flour in, stir it up. Add your milk and stock. Season with salt and pepper and stir it up well to make sure there no flour lumps. Stir until thickened. Add the cheese, stir until melted. Add in the broccoli and simmer until it is cooked how you want it (we don’t like ours too soft). I think Erik would have preferred this soup to be thicker, and with the amount of liquids, you might want to add more flour if you like it that way, too. Otherwise, damn good soup for our neverending winter nights…
