an incurable sweet tooth …

… really appreciates simple things sometimes. i’ve been aware of the existence of Blondies for a long time. i’ve even eaten a few, but i’ve never made one. a simple google search procured a really easy and quick recipe that i rushed home to try. these are handy to keep around if you want something buttery, sweet, soft, and just plain yum.

You Need:

1 stick of butter, melted
1 cup dark brown sugar
1 egg, lightly beaten
1 teaspoon vanilla
1/2 teaspoon baking powder
1/8 teaspoon baking soda
pinch of salt
1 cup flour
1/3 cup of mix ins (in my case, chopped up pecans. but you can use butterscotch chips, peanut butter chips, walnuts, chocolate chips, whatever you want. except bacon. or cheese. i think those would be horrible mix ins. don’t try either of those things).

heat the oven to 350. lightly grease an 8×8 or 9×9 pan. i like to line the pan with aluminum foil and let some hang over the side and grease the foil. i didn’t even have to wash the baking dish doing that. seriously. lazy no-dish washing people like me should do that. anyway, mix together the butter and sugar in a bowl. add the egg and vanilla and stir. add the flour, baking soda, baking powder, and salt and stir. add your mix in(s). pour into the pan and spread it out. the batter comes out fairly thick. bake 20 minutes or so until they’re done. cut ’em into cute little squares and hide them from Mr. Pickypants. He’ll eat them all. Seriously.

*this is a basic recipe i think, found on different sites: http://simplyrecipes.com/ has one just like it and i believe SmittenKitchen does as well … just providing credit for the recipe. i dont, by the way, make many of these up. i just vary “ideas” i find but I always try to credit them. just letting you know. šŸ™‚

    I would so totally put bacon in these. *grin* (Just kidding.) I have, however, tried chocolate with bacon in it, and it was fabulous – I’m not even a big bacon fan. But I heard on NPR the other day that someone makes chocolate-covered bacon – that’s just a little much for me.

      i would only eat a bacon blondie if you were the one who cooked it. i actually read in either the food section of Texas Monthly or in Bon Appetit where bacon for dessert is some freaky new trend. ::shakes head:: first deep fried candy bars, now chocolate bacon. crazy ass people …

    ::eyeroll:: they’re brown sugar cookies with pecans in them. i doubt you’d like them all that much. there’s not even any chocolate in them.
