i’m not EVEN going to try writing an accompanying post to this recipe. i am far too busy spontaneously combusting over how good these lemon bars are. the recipe comes from make them, enjoy them.

Lemon Bars

You Need:

2 sticks butter
2 cups flour
1/2 cup powdered sugar
4 eggs
2 cups sugar
4 Tablespoons flour
1/4 cup lemon juice
1 Tablespoon lemon zest

heat the oven to 325. mix that butter, 2 cups of flour, and powdered sugar together in your mixer with the paddle attachment. scrape once in awhile and mix this on low so it incorporates everything altogether. press this mixture into an ungreased 13×9 pan. bake this for about 20 minutes. meanwhile, mix the eggs, sugar, 4 tablespoons of flour, lemon juice, and zest together. after the crust has baked awhile, pour the filling on top. bake this another 20 minutes or so, or until it is set. I had to bake mine a lot longer and i suspect that has something to do with the altitude. i usually get pretty lucky in baking that i don’t have to alter recipes too much for high altitude baking, but this is one of those that probably had to be altered a bit. i just didn’t. oh well. they’re still good. loosen the edges of the cookies and cut into bars after they’ve cooled and solidified awhile. i thought they were just fine without sprinkling more powdered sugar on top, but if you want an extra burst of even-sweeter, go for it. put more on.
