… not to cook dinner when you’re mad at your husband. between giving him the evil eye and banging around pots and pans, i overcooked my damn eggs.
this particular dish is one of my favorite tex-mex meals, and a really great breakfast/dinner. “ox eyes” or “eggs in hell,” they’re called and they basically consist of eggs poached in red sauce, and eaten scooped up with refried beans and flour tortillas. however, the yolks are supposed to be RUNNY, not almost cooked through. dammit. but i’m sharing this with you, because they’re really very good when cooked properly … so uh, give them a try when you’re not mad at your significant other … they’re worth it, i swear.
about 1/4 of an onion, chopped
a garlic clove, minced
about 5 roma tomatoes
1/4 cup or so of cilantro, chopped
salt and pepper
i roasted my tomatoes and a jalapeno, tossed in some olive oil, on the grill outside. this doesn’t take long – just until they’re nice and charry on the outside. i put these in my blender and pureed them together. i heated some oil in a large pan and cooked the onion and garlic until the onion is soft. Add the tomato/jalapeno puree to the onion. salt and pepper to taste and lower the heat. Break the eggs into the sauce, cover. let these simmer until the egg whites are set and the yolks are SOFT. do not take your eyes off it to direct thoughts of murder towards your husband. your eggs will overcook. trust me on this. serve these with fresh refried beans (preferably homemade, not canned), and hot, fresh flour tortillas.
