The search for the greatest cookie ended last week with my brownie sex cookies (if you didn’t read the entry, don’t ask about the name). but having a stash of those coconut cookies i baked and these for lunches is just a good idea. plus if i make those brownie cookies repeatedly, i will eat them repeatedly, and the shorts i just bought a size smaller will no longer fit. enough said. for these cookies, i changed the recipe a teeny bit because:
1. i had no ground cloves and no wherewithal to grind some up
2. i like oatmeal cookies but i don’t really like raisins so i was well pleased that Smitten Kitchen had this recipe for oatmeal cookies with chocolate chips. and pecans.
3. i had no oranges, thus no orange zest. oh well. deal with it.
Smitten Kitchen’s Oatmeal Pecan Chocolate Chip Cookies
1 stick butter
3/4 cup sugar
1 cup brown sugar
1 teaspoon salt
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1 cup oatmeal (i used the quick cooking kind)
2 cups chopped pecans
1 1/2 cups chocolate chips
heat the oven to 350. line cookie sheets with parchment, or spray with Pam. in a mixer, cream the butter until fluffy. add the sugars in. cream them together. add the salt, vanilla, and eggs. beat well. in another bowl, whisk together the flour, baking soda, cinnamon, and nutmeg. add half of this to the butter mixture. incorporate that half, then add in the rest. mix it all in. stir in the oats, pecans, and chocolate chips. drop the dough by tablespoon-fuls about an inch and a half apart onto the sheets. bake for 10-12 minutes, until the bottoms are lightly browned. let them cool on the sheet before transferring to a rack to cool completely.
