B.O.B., Day 4

mm grilled chicken.

mm toasted kaiser rolls.

mmmm guacamole.

Tex Mex Sammies

You need:

boneless, skinless chicken breasts
lime juice
lime zest
ground cumin
chopped cilantro
salt and pepper
crumbled, dried mexican oregano
minced garlic cloves
avocado
roma tomato, chopped
onion, chopped
1 jalapeno, chopped
more salt and pepper and lime juice
more cilantro, chopped
kaiser rolls, toasted

in a bowl, marinate the chicken breasts in lime juice, zest, salt and pepper, cumin, garlic, oregano, and cilantro. toss it on the grill and cook until the juices run clear. bring inside, let the meat rest. slice into uh slices. meanwhile, mash up the avocado, mix with the onion, tomato, cilantro, jalapeno, lime juice, and salt and pepper. spread some on a toasted kaiser roll. layer chicken slices on top. if you want to add extra greens and tomatoes, by all means, do so. serve the sandwiches with tortilla chips and the extra guacamole for dipping the chips.

p.s. i accidentally left out the hot sauce she originally calls for in her recipe. not for any particular reason, just that i simply forgot.

p.p.s we’re switching the menu plans for tonight because of my school obligations, so the final B.O.B. recipe will not be made until Friday night. hope you can contain yourselves…tonight it’s going to be a 5 minute meal, with Hebrew National Beef hot dogs and french fries …
