I purchased some fancy-looking chocolate chips and used most of them for last week’s cookie so i had to use the half cup left of them and chop up some semi-sweet baking chocolate chunks to make up the rest of the chocolate i needed. delicious cookie – not exceptionally sweet, nice and chocolate-chunky, but i think i’m ready to do a non-chocolate cookie next week. i saw lime sugar cookies on Technicolor Kitchen, or there’s always Orangette Molly’s delicious, delicate buttermilk cookies … but today, Peanut Butter and Chocolate Chip. Can’t go wrong with that combination …

You Need:

1 stick soft butter
1/4 cup brown sugar
1/4 cup white sugar
1/2 cup peanut butter
1/2 teaspoon vanilla
1 egg
1 1/4 cups flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup semi sweet chocolate chips or chunks

heat the oven to 375. cream the butter, peanut butter, and sugars together. mix in the egg and vanilla. in a bowl, whisk together the flour, baking soda, baking powder, and salt. add this into the sugar mixture. stir in the chocolate. drop by spoonfuls onto a greased cookie sheet. flatten slightly with a fork. bake for 10-12 minutes, until the bottom edges are lightly browned. set a booby trap so alex doesn’t get into them so there will be some left over. (trust me on this. he liked these cookies. no matter where you are, he will find them).
