the only good part about waking up at 5:30 (and sometimes sooner because my internal clock likes to play this trick on me where i spontaneously wake up at 5:20 knowing it’s too early, but that i’m not able to really go back to sleep until 5:30 because it’s TEN MINUTES. my body is cruel that way) every morning is that i do actually have time to bake things if i want to for breakfast. Simply Recipes has a lovely little coffee cake recipe that a) was utterly delicious and delicate b) let me use up two of my rapidly declining Granny Smith apples i had leftover from last week, and c) made my brother want to crown me the queen of all breakfast treats. the only thing i would perhaps do differently next time is cut the amount of sugar in the cinnamon-sugar mixture that gets sprinkled over the apples and on top. it was a tad sweet for me on a tuesday morning …

Apple Coffee Cake
recipe from Simply Recipes

You Need:

1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
2/3 cup sugar
1 teaspoon cinnamon
5 1/2 Tablespoons soft butter
1 egg
1/2 cup milk
1 large apple, peeled and sliced

heat the oven to 375. grease up a square cake pan. combine 1/3 cup sugar with the cinnamon. stir together. set aside. in another bowl, whisk together the flour, baking powder, and salt. in your stand mixer, cream the butter with 1/3 cup remaining sugar. beat in the egg. add the flour in a couple additions alternating it with the milk. pour half the batter in the greased pan. arrange the apple slices on top of the batter. sprinkle half the cinnamon sugar on top of the apples. spread out the remaining batter on top of all this. sprinkle the rest of the cinnamon sugar on the top of the cake. bake for 30 minutes or until a tester comes out clean.
