i just discovered this blog and it’s pretty fantastic. i think we’re still in a “tired of cookies/chocolate” rut so this was a nice departure from that. plus it’s shortbread-ish AND there’s something like an apple pie filling on top of that so … good idea all around.

Apple Crumble Bars

You Need:

filling:
4 apples peeled cored and chopped into little cubes (i used granny smith’s)
5 Tablespoons sugar
1/4 teaspoon cinnamon
2 teaspoons cornstarch
2 Tablespoons lemon juice

shortbread base:
1 1/3 cups flour
2 Tablespoons sugar
1 teaspoon salt
1 stick butter, softened
1/4 cup preserves or fruit jam (i used apricot)

crumble:
1/2 cup flour
3 Tablespoons sugar
4 Tablespoons butter, softened

for the filling, cook the apples with the sugar and cinnamon until they’ve softened. stir the cornstarch and lemon juice together. add this to the apples and cook for a few minutes, until everybody’s all thickened up. take it off heat and let it cool.

for the base, whisk together the flour, sugar and salt. with a pastry cutter or two forks, blend the butter in with the dry ingredients until everything looks kind of like wet sand.

line an 8×8 square baking pan with foil (let the sides overhang, like you would when prepping a pan for brownies). grease this. press the cookie base into the bottom. bake in a 350 oven for about 10 minutes, until the edges are lightly browned. immediately spread the preserves on top of the base. spread the apple mixture on top of all this.

in a bowl, combined the 1/2 cup flour and 3 Tablespoons of sugar (for the crumble topping). cut in the butter until this is all crumbly and well combined. sprinkle this on top of the apple mixture. bake all this for about 30 minutes, until the top is lightly browned. i let this cool for a bit in the pan, then lifted it out by the foil overhang, and let it sit in the fridge for a bit before i attempted to cut these into bars.
