it’s probably my favorite thing ever. i recently told a facebook pal that i go to bed thinking about what i’m going to eat the next morning and i wasn’t lying. i really do. i especially love breakfast for dinner, which feels so subversive, even though it’s probably not. but whatever. if having eggs at night makes me feel rebellious, i’m going with that feeling. this particular breakfast is perfect for dinner; it’s hearty and completely soul satisfying. there are a million ways to make this, but i like my version.
4 corn tortillas (store bought is just fine) cut into strips lengthwise, then cut horizontally, creating several small strips
1/4 white onion, chopped
garlic clove, minced
a jalapeno, deseeded, deveined, and chopped up into small pieces
bacon, preferably thick cut and peppered cut into small cubes
a roma tomato, chopped
4 eggs, whisked together
some cilantro for garnish
a good large spoonful of pinto beans, drained (i keep a bowl of pinto beans i’ve made in the crockpot in the fridge most of the time)
heat some oil in a pan. fry the tortilla strips until they’re browned. drain on a paper towel lined plate. in a large skillet, cook the bacon until crisp. transfer to the paper towel lined plate to drain. in the bacon grease (and if you’ve used like, 3 strips of bacon you should have plenty of grease without having to drain any off) saute the onion, garlic, and jalapeno until they’ve softened. add the tomatoes and the spoonful of beans. salt and pepper all this. stir in the fried tortilla strips, then fold in the egg. stir all this together until the egg has cooked through. serve with a sprinkling of cilantro on top with warmed corn tortillas for scooping up. you don’t even need a fork, i’m serious.
i have to let you know this photographed plate was Erik’s portion. and he ate it all. this is why i can’t stand watching him eat – he eats all this and never gains a pound. uggggggggh.
