fancy pants pizza …

is working better than regular homemade pizza for me right now because i’m still at odds about the taste of my pizza sauce. sometimes i like it, sometimes i don’t. this was an excellent cop out. i kind of muddled along with this recipe, making some up as i went AND got to use the truffle oil again. me so happy … and garlic breath-y …

White Vegetable Pizza

You Need:

pizza dough, a frozen brand thawed, your favorite recipe, or if you did what i did and bought a HUGE case of dough balls at Sam’s Club approximately a year ago, use one of them
olive oil
salt, pepper, mixed Italian seasoning
garlic cloves, minced
shredded mozzarella
spinach, stems cut off, cut into strips
truffle oil (optional)
lemon juice
onion, thinly sliced
mushrooms, thinly sliced
tomato thinly sliced (I used these lovely yellow ones that were on sale at the grocery)

heat the oven to 400. spray a pizza pan with non stick spray and sprinkle some cornmeal on it. on a floured surface, roll out the pizza dough to the desired size. brush the dough with olive oil. sprinkle some salt and the Italian seasoning all over. prick it a few times with a fork. put it in the oven and bake the crust until it is lightly browned and the bottom is mostly done. pull it out and set it aside. meanwhile, mix the minced garlic, salt and pepper with the ricotta. spread the ricotta out all over the pizza, to within 1/2 inch from the edges. in a bowl, toss the spinach with a nice drizzle of truffle oil and lemon juice. spread it evenly over the ricotta. sprinkle all this with mozzarella. top the pizza with onion, mushrooms, and the tomato slices. bake again until the cheese is melted and bubbly.
