pork is my friend these days. it’s cheap and tasty and i think we need more things in life that are both of those things. i had a hankering for mashed potatoes and gravy and needed to use up some meat in the deep freeze and this is what i came up with …
Pork Chops with Mushroom Gravy
bone in pork chops (not the super thin ones. mine were about 1/2-1 inch thick)
vegetable side dish to round out the meal (i used frozen corn with some of our frozen garden peas steamed, then sauteed in butter/olive oil)
season both sides of your chops with salt, pepper, and garlic powder. heat some oil in a large pan. sear your pork chops until they’re very brown on both sides. transfer to a baking dish or a foil lined baking sheet. pop them in a preheated 375 degree oven to finish cooking through. meanwhile, evaluate the oily bits leftover in the skillet. if you need to add more, please do so. i had to add another tablespoon or so. heat that up and saute your mushrooms until golden. sprinkle in a Tablespoon or so of flour. let that cook for a moment to cook out the floury taste. slowly pour some milk in and whisk together. stirring often let everything simmer up to a delicious gravy consistency. season with salt and white pepper. i can’t exactly spell out the exact steps for making gravy. mostly because i don’t know. i just do it.
serve your chops with the gravy, mashed potatoes and vegetables.
