easy dinners

so lately i’ve taken up doing night-before prep work for the next evening’s dinner (if i’m not too tired and all “feck everything,” that is). i have to say, it makes dinners go much faster which equals more free time at night which equals more time for schoolwork. (okay fine, more time for shows on food tv and/or games of Cafe World on Facebook). beat the truth out of me, why don’t you? it’s also been a “comfort food is SO VERY NECESSARY IN MY LIFE RIGHT NOW BECAUSE IF I DON’T GET COMFORTED I’M GOING TO MURDER SOMEONE IN THEIR FACE” type of week. hence the appearance of both pizza and cheeseburgers this week. i’m pretty proud of myself about the pizza though – i didn’t use a ton of cheese and there were vegetables all over it. far better than a Pizza Hut night, wouldn’t you say?

Sauceless Vegetable Pizza

You Need:

enough of your favorite pizza dough for one large pizza (i’m still working through the dregs of my Sam’s Club case)
extra virgin olive oil
Italian seasoning
kosher salt
some shredded mozzarella (or fontina)
onion, thinly sliced
red bell pepper, thinly sliced
portabella mushrooms, thinly sliced
tomato, thinly sliced
garlic cloves, minced

heat the oven to 425 – 450. roll out your dough on a floured surface. spray a pizza pan with Pam and dust with fine ground cornmeal. lay the dough on the pan. drizzle olive oil onto the dough and brush over the surface of the dough. season with some of the salt and the italian seasoning. bake the dough until browned and such. take out of the oven and sprinkle it with the mozzarella. layer the onion, red bell pepper, mushrooms, tomatoes, and garlic. bake until the cheese is all melty.

Hatch Chili Cheeseburgers

You Need:

ground beef
salt and pepper
small can of Hatch chilies
slices of pepperjack cheese
avocado, sliced
hamburger buns
other burger accouterments

make patties with the ground beef. salt and pepper. heat a griddle or cast iron pan. cook the hamburgers to your preferred level of doneness. spoon the chilies on top of the patties. lay a slice of cheese on top. let the cheese get all melty. butter the buns and toast in the broiler. assemble the burgers by setting your cheese chili burger on the bun and topping with the avocado slices and any other burger toppings you like.
