i told erik it was a good thing i actually liked to cook because i could really get used to this whole less-than-30 minute dinner thing. the reason i kick off these little jaunts of themed dinners is actually because of rachael ray. i’m a loyal subscriber to Every Day with Rachael Ray (as the three of you who read this probably already know) and say what you want about her, but she’s really good at interesting, convenient recipes. the February issue of the magazine featured a some good looking sandwiches, one of which, the muffaletta grilled ham and cheese, was especially intriguing. i saw that and remembered making this RR delight (which, coincidentally, made it onto the menu this week) then *boom*. sandwich week#2 was born. i like a good muffaletta and i like grilled cheese. i don’t know why i didn’t think to put them together. but thank someone rachael did.
Muffaletta Grilled Cheese Sandwiches
recipe adapted from Rachael Ray
good deli ham
those thin salami rounds you can get in the sandwich meats section at the store
black olives, sliced
butter one side of each bread slice. lay one in a heated pan. layer the ham, a slice of provolone, and salami. top with giardiniera, peperocinis, olives, and spinach. top with another slice of buttered bread (buttered side out). toast on both sides until golden brown. cut in half, eat with soup.
