because i like sandwiches and goshdamn it, they’re so easy. especially when your lovely mother in law brings you twice baked potatoes that you can’t make that taste as good as hers no matter what you do. but it’s cool because they’re a lot of work anyway and you’d just rather eat hers.
so yeah. sandwiches rock.
Turkey Antipasto Panini
recipe from Cooking Light, Fresh Food Fast
some crusty bread (i used slices off those two loaves of No Knead Bread I made on Sunday)
deli turkey, shaved, preferably
artichokes (the jarred kind are totally cool), chopped up a little
roasted red bell peppers (i made my own. they’re cheaper)
tomatoes, sliced thinly
basil leaves, chiffonad-ed
provolone cheese slices
heat a panini press or a large skillet. smear some mayo on one slice of the bread. start layering turkey, provolone, red bell peppers, tomatoes, basil, and artichokes. top with the other bread slice. lightly spray both sides of the sandwiches with cooking spray. pop them in the press or your skillet and either put down your press lid, or just make them in your skillet like a regular grilled cheese. serve with eilene’s twice baked potatoes, if you can get your hands on them.
