“because i was very neat and tidy.” somewhere, in some alternate universe where i have friends who have nicknames for me, that would probably be mine, too. i really dig organization and itineraries. you should see me on vacation with the pens and carefully labeled and filed notebooks – all i’m missing is a fannypack and a clipboard. i make my menus the same way i make my monthly refrigerator calendar -the one that shows the due dates for bills, erik’s once a month weekend job schedule at the liquor store, birthdays, social events, blah blah blah. i have a month’s worth of menus on one calendar – breakfast on the top of the square, dinners on the bottom. tonight’s was supposed to be “tacos.” i say “supposed to” because as much as i like a well laid plan, i like changes of plans even more which is totally against my carefully planned out, neatly penned in print lifestyle. BUT i have had a huge mess of a week including but not limited to a huge fight with a  jerk of a sibling who i am not currently speaking to and probably won’t be anytime in the near future, an astonishing lack of sleep, some absolutely wicked indigestion/heartburn in the middle of the night, and today, a horrid combination of that lack of sleep catching up with me and a really queasy, sour stomach. blurgh, man. so when i picked up this recipe from Joy the Baker for Berry Meyer Lemon Pancakes AND received some maple syrup we ordered (from Dragonfly Sugarworks – delicious syrup, nice people, go buy some, go) – i started thinking “ohhh comfort food” then “menu change!” and now here we are, totally ignoring the “tacos” in neat print on my calendar. sometimes you gotta be all “eff you, organization.” especially when cruel family members and sour stomachs are involved. but skip all that nastiness, please. on to the pancakes:

Berry Lemon Pancakes
recipe adapted from Joy the Baker (because i have no access to meyer lemons here)

You Need:

1 egg
1 cup flour
1 Tablespoon sugar
zest of one lemon (or use a meyer lemon if you have one)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
2 Tablespoons butter, melted & cooled
1 cup fresh berries (i used blueberries)
cooking spray

in a bowl rub the zest and the sugar together. stir in the flour, baking powder, baking soda and salt. in a small bowl, whisk together the egg, buttermilk and butter. stir this gently into the dry ingredients. don’t overbeat this, okay? you can either stir the berries directly into the batter, or just drop them on top of the pancakes as you cook them. i drop them on top while i’m cooking on the stove. i don’t get blue pancake batter that way. heat up a griddle or large pan. spray with non stick (or use butter or oil, whatever you like). drop some batter into the pan/griddle. her recipe says to use 2 heaping tablespoons full, but we’re pigs so i just used a large serving spoon to dump out my batter. this made four large (like diner size large) pancakes – 2 for me, 2 for erik. but if you want to make them smaller, i think this does make the 8 to 10 smaller cakes the recipe states. cook until bubbles start to form on top then flip and cook all the way through. i don’t have to tell you how to make pancakes. you know what you’re doing. i served mine with butter and syrup.

that’s how i like my pancakes. zesty and misshapen.

    sorry you’re having a rough week! hang in there – and of course, the pancakes look amazing.

    (and i’m equally obsessive about lists, menus, etc, although i only manage a week at a time because my job is so unpredictable – in a good way.) 🙂

      thanks 🙂 i’m feeling better already and those pancakes were delicious. i like that nice crisp lemon flavor in there. they weren’t heavy cakes, either.

    and i love you as well and i am so lucky to have you in my life. and yes, someone needs to kick my brothers’ ass. ugh. him and his snake of a wife.
