because it started raining again today. 4 days or so of nary a cloud or a drop of rain. now it’s back. they will have blood in exchange for 60-70 degree sunny days. sigh.
but yesterday i was able to keep the windows open again for breakfast and enjoyed a waffle with my morning sunshine. there’s always that perfect balance of crisp exterior, soft interior that i’m always looking for in waffles and none of the recipes i’ve found at either Joy the Baker’s blog or Baking Bites have failed me yet. I picked up this one for quick blueberry waffles from Baking Bites and it fit my Monday morning perfectly.
recipe from Baking Bites
1 3/4 cups flour
1/4 cup cornstarch
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
3 Tablespoons sugar
1 1/2 cups buttermilk
2 teaspoons vanilla
6 Tablespoons butter, melted, cooled
1 cup blueberries (i used my previously fresh now frozen ones)
start heating up a waffle iron. in a bowl, whisk together the dry ingredients. in another bowl, whisk together the buttermilk, eggs, vanilla, and butter. mix the wet ingredients into the dry until well incorporated. stir in the blueberries. let the batter rest for about 10 minutes. spray your iron with nonstick cooking spray and ladle some batter into the iron. the amount you put in depends on your waffle iron. i have a large one with deep holes so i can fit quite a bit of batter into it and know it’s not going to overflow on me. you figure out your own batter to iron ratio. my large iron yielded 8 waffles out of this amount of batter. serve with butter, maple syrup (the real stuff, don’t you go Karo on me), and some fresh blueberries if you want.apologies for the crappy upside down picture. i was in a hurry to eat these delicious things and didn’t bother to try and get a better shot. and i don’t regret it.
