This is a post without much wordy accompaniment, because sometimes you just have to let the food speak for itself. I will say, however, that this is weekend food at its finest. All Friday’s should be this delicious.
Queso Blanco Burger
recipe from Inspired Taste
enough ground beef for a couple hamburgers
salt, pepper, cumin
Cholula hot sauce
butter, couple Tablespoons
diced yellow onion
a small poblano pepper, roasted, skin scraped, and diced up
a jalapeno, diced
shredded monterey jack cheese
hamburger buns, toasted
pico de gallo
Mix the hamburger with salt, pepper, cumin, and a few dashes of Cholula hot sauce. Form into patties. Heat a grill or a cast iron skillet. Cook your burgers to the desired level of doneness. Set aside to rest. In a saute pan, heat a tablespoon or so of butter. Cook the onion and jalapenos until the onion is translucent. Add in the diced poblano pepper. Melt the other tablespoon of butter. Sprinkle in a tablespoon or so of flour. Cook for a minute. Whisk in milk slowly (you’re making a cheese sauce, like you would for homemade macaroni and cheese). If you’ve made that kind of cheese sauce from a roux, you’ll know what kind of texture you’re looking for. If not, well, not too thick, but not soupy thin, either. Add in salt and pepper to taste. Off heat, add the cheese and stir to melt it. To assemble the burgers, place your patties on a bun, top with the cheese sauce, pico de gallo, and avocado slices.
