a quickie

Because you can make an incredibly filling, tasty lunch with just a packet of ramen and some veggies.

Vegetable Ramen

You Need:
a packet of ramen (you can either use the seasoning packet or don’t – I’ve made this both with and without and it’s fine either way)
sesame oil
white onion, diced
3-4 asparagus spears (I like the really thin ones), woody ends trimmed, cut into bite size pieces
garlic clove, finely minced
some grated fresh ginger
a couple smallish mushrooms, sliced (I used criminis)
soy sauce
lime juice
scallions, chopped for garnish
an egg (optional)

Prepare your ramen, cooking the noodles until they’re soft. Drain and set aside. Heat a tablespoon or so of sesame oil in a skillet. Saute your onions, asparagus, and mushrooms until slightly softened. Add in your garlic and ginger and cook for a minute. Add your noodles to the veg. Drizzle on some soy sauce and season with black pepper and some of that lime juice. If you want some protein with this meal, fry an egg and put it on top. Garnish with the chopped scallions.

    YES to the fried egg on ramen! i would totally do this for lunch tomorrow had i not just sworn off carbs.

    i love the way that bowl of goodies is peppered.

    egg yolk streaming down into the noodles = creamy, rich, deliciousness and joy. this is the best lunch EVER. true story.

    I probably eat enough carbs for the both of us. veggie stir frys on their own though are pretty wonderful.

    i like pepper. a lot.
